Memphis dry ribs are pork ribs cooked with a spiced dry rub rather than sauce, a style famously created by Charles Vergos at the Rendezvous restaurant in Memphis. The rub, which is often pepper-based with ingredients like paprika, brown sugar, garlic powder, and onion powder, is applied before cooking and sometimes again at the end for extra flavour. This "dry" preparation results in tender ribs with a bold, spicy flavour, though some versions may be "mopped" with a vinegar-based sauce during cooking to keep them moist
