After years of disappointing hot sauces that had no flavour, a chemical after-taste, and cheap chilli’s to bulk the heat we decided to make our own. This Caribbean-style sauce, which combines the tropical fruits with the World’s hottest chilli the Carolina Reaper. The fruity sweet Kesar mango and papaya belies the oncoming onslaught of the Carolina Reaper that leaves you in no doubt why it is the world record holder. Using only Carolina Reaper and no other chilli’s you can still taste the fruitiness of the chilli, the delayed rush of heat at the back of the throat, and the slowly diminishing after burn. How to use it: Its ideal as a marinade or for drizzling to making a dish more daring. Sprinkle on tacos, fajitas, and burritos. Add to your favourite barbecue sauce, stews, curry and pasta sauces. Brush on to grilled steaks, ribs and chicken.
