Pumpkin Soup

BBQ Pumpkin Soup


1 large onion chopped

2 carrots peeled and chopped

2 garlic cloves

1 bay leaf 

25g unsalted butter 

1 medium pumpkin deseeded and roughly chopped

1 medium-sized sweet potato roughly chopped

40g Santa Maria BBQ Rub

1 litre pint vegetable 

100ml double cream  

Salt & white pepper 


 Let’s get cooking 

Add butter to large pot slowly cook the garlic, onion pumpkin & sweet potatoes until start to soften, add in Santa Maria BBQ rub. 


Add stock and cook for approx. 50 minutes or until vegetables are tender, use a small hand blender to wiz up the soup add cream and salt & pepper to taste
