Glazes

Glazes are brushed on food as it cooks however, they are applied toward the end of cooking to create a shiny coating. Most Glazes contain sugar, which caramelizes during the cooking process, creating a sweet, flavourful crust. This is what we in the UK associate BBQ sauces with.
Finishing Sauce

A uniquely American term, a finishing sauce is brushed on at the end or after cooking to keep it moist and add an extra layer of flavour. In barbecue this usually means basting your ribs, chicken, beef, kebabs, or whatever is on the grill 5 minutes before you want them. This allows for the sauce to warm the through.
As a Dip

Some sauces are just as happy being served on the side hot or cold there are no rules and you can use a bit of what you fancy. Here we have Texas BBQ, and Carolina Mustard.
