I fill the same starter chimney with charcoal, weigh it, light it, and then the flames hit near the top and go into the gateway Drum Smoker. The Flame Boss 200 regulates the set temperature 2of 30F, and we can see how hard the fan has to work to do this. We can see the temperature fluctuations measured by the Flame Boss, and we compare this to the readings from the TermaQ, a calibrated thermometer.
