We got into Cajun flavours when visiting Louisiana and wanted to create a rub to incorporate this. A blend of spices, chillies, toasted cumin & a hit of Muscovado toffee flavour give the classic taste a sweeter flavour which works perfectly.
A medium heat with a mild warmth.
Use on fish, poultry, chicken wings & vegetables.
For a little twist on a classic try adding to salsa.
