South Carolina has its own distinct sauce. Throughout the Columbia to Charleston corridor, barbecue is characterized by the use of a yellow "Carolina Gold" sauce, made from a mixture of yellow mustard, vinegar, brown sugar and other spices. If you haven’t had it before it can seem off-putting, but mustard BBQ sauce quickly becomes addictive. The combination of sweet and tangy flavours bring out the absolute best in BBQ pork or BBQ beef. It's a full flavour sauce designed to cut through the fattiness of BBQ pork ribs or BBQ pulled pork.
How to use it: Try it as a finishing sauce for pork shoulder or ribs, painted on 30 minutes before the end of the cooking time. Or try it on a pulled pork sandwich, brisket, or even hot dogs and burgers.
