Chopping board, knife, bowl, temperature probe
Ingredients
Spatchcock Chicken
1 tablespoons Boston beach Jamaican jerk RUB
Memphis red BBQ sauce – Award Wining
1 lime
Method
Add the spatchcock chicken to bowl with lime juice Rub into the chicken then dust with Boston beach Jamaican jerk RUB.
let still for 30 minutes. The rub will start to work its magic add to grill and start to cook with some apple wood chunks work well with chicken. when almost cooked start to apply the Memphis red BBQ sauce – Award Winning.
with a pastry brush keep doing this till you build up a good, charred coating all over the chicken.
BBQ/oven temp 150c / 300f / gas mark 2. a safe cooking temp of 75c internal temp of chicken
