Burger with Roquefort Dressing
Take backyard burgers to artisan steakhouse standards. This showstopper pairs a succulent 8oz rib cap patty with a luxurious double-hit of pungent French Roquefort—both blended into a tangy buttermilk dressing kicked up with our Peruvian Amarillo Chilli Aioli, and crumbled straight over the hot, resting beef.
To balance the intense, savoury umami of delicate Italian prosciutto and peppery wild rocket, each layer is kissed with a sweet, golden drizzle of Firefly Agave Nectar. Served in a golden, mayo-toasted brioche bun built to hold every drop of juice, this recipe proves that when top-tier butchery meets balanced heat and sweet glaze, you get pure burger perfection.
Directions
Grill or griddle your burger, leaving it unseasoned to allow the flavours of the accoutrements to shine. Grill to an internal temperature of 54 & 60c for a pink, flavourful beef.
Let the burger rest, then apply a good coat of mayonnaise to the brioche and toast it on the griddle or in a pan. Mayonnaise creates a crisp barrier against juicy patties due to its higher smoke point.
Dress the base brioche with the Roquefort dressing, add rocket leaves, and place the burger on top.
Crumble some of the remaining Roquefort onto the burger and drizzle with Firefly Agave Nectar.
Add loosely folded prosciutto on top of the burger and sprinkle with black pepper.
Finish with another drizzle of Firefly Agave Nectar.
