Pork Belly Strips with PeanutButter & Mustard Glaze

Memphis BBQ Pig Rub
For the glaze-
1 tbsp crunchy peanut butter
30ml apple juice
1.Give the pork belly strips a good dusting of Memphis BBQ Pig Rub and let it marinade for at least an hour.
2.Place the pork belly strips on the tray andcook at 150C / 300F / gas mark 2 for approx.25-30 mins.
3. For the peanut butter and mustard glaze, just add the peanut butter, the apple juice and the Carolina Honey Mustard sauce to a saucepan and simmer for 5 minutes.
4.When the pork belly starts to crisp up, start adding the glaze with the brush (safe cooking temp 75C).
5.If You do not like peanut butter, you can leave it out and just glaze with the
Carolina Honey Mustard Gold BBQ Sauce.
